A friend of mine won a service that I donated to a church auction of a cake that served up to 48 people. She requested a white cake with raspberry filling, fresh whipped cream icing and their initials piped on each slice of cake. Here is a picture of the cake slice:

I Am A Builder Badge

I am the Primary Chorister (Children's song leader) at church. Each year we put together a program combining the music we have learned all year with some spiritual thoughts put together by the children. Our program was on Sunday, one of the songs taught the children that "they were builders!" So when I was asked to make treats for my kids on Sunday, I decided on these badges for them. Rolled butter cookies decorated with rolled fondant.

Red Velvet Cake Pops dipped in red and black candy melts and then rolled in red and black sanding sugar.. These were for a Halloween party I was invited to attend. They turned out fabulous.

I was thrilled to make these cream filled cupcakes for a client who requested they be decorated in Candy land style. I rolled a few in Wilton Sugar Pearls and made roses out of Sour Tape. Other cupcakes were simply decorated with candy.

Bridal Shower Cake

This cake is a two-tiered Chocolate cake, filled with chocolate mousse.

The bride requested a cake incorporating red and brown with fall colors. Keep it modern and simple using polka dots and stripes. Later her mother handed me the "naughty dice" to add to the top of the cake.

Now I have made a few cakes between my last post and this one, but I have unfortunately failed to document them.

Dream Filled Cupcakes

For the Dial Open House, the Mother of the Groom contacted me about making 225 Cupcakes.

She wanted chocolate cream filled cupcakes with pink cream cheese icing and chocolate polka dots and pink white chocolate flavored cream filled cupcakes with chocolate fudge icing and pink white chocolate polka dots.

This was such a fun job. While the pink cupcakes were baking in my oven, I thought they smelled pink. I had some wonderful friends come help with the process of filling each individual cupcake and making the chocolate candy polka dots. Later my husband helped me place the polka dots on each cupcakes. A new bit of sparkle I added this time was an edible shimmer I found at the Cake Supply Store. I was so pleased to hear that the cupcakes were well received.

Forgive me, I took these pictures with a cell phone camera. This is my "sugnature" cake I guess. All three wedding cakes I am booked for this year take on the scroll swirl design and theme.

The two bottom tiers are white cake with cream cheese filling, the top layer was carrot cake with cream cheese filling. This particular bride (who was a redhead) loved my carrot cake so she specifically asked for the top layer to be her personal cake. :)

The grooms cake* was a dark chocolate sheet cake with a fudgey basketweave on the side of the cake. The bride chose the You Tube logo on the cake because the groom loves the site.

More on the traditions of the grooms cake: A groom’s cake has its roots in the South, and although it used to be viewed as an added and unnecessary expense, this once-neglected cake has been making a huge comeback. Intended to be a gift from the bride to the groom, the groom's cake is usually dark and designed with a nod towards what's traditionally considered "masculine" Although you do not need a groom’s cake, you just may want one. The groom's cake can serve many purposes, from dessert at the rehearsal dinner, to an alternative choice to the bride's cake at the wedding. It's customary for the groom's cake to be displayed next to the bride's cake, and later cut and put into boxes for guests to take home. And believe it or not, legend has it that single women are supposed to sleep with a slice under their pillow the same night they receive it -- and if they do, they will dream of their future husband. A current creative trend in groom's cakes is to have the cake reflect the groom's interests and hobbies.

Just yesterday, I made and delivered a 4 tiered stacked Coconut Cream cake with Pineapple whipped filling for a wedding reception in Hutto, Texas. It was iced with buttercream and wrapped with a sparkly white ribbon with floral accents.

On this particular wedding cake, I wrote the Grooms last name in icing as a personal touch to their cake.

A few weeks ago I had an order of one hundred jumbo cupcakes. I made 75 chocolate fudge cupcakes and 25 white chocolate cupcakes filled with sweet whipped cream. I dipped them in dark chocolate ganache and white chocolate ganache, then topped them with a tiny daisy.

I seem to enjoy being more creative with cupcakes lately, particularly filled ones.

Carrot Cupcakes with filled and topped with whipped cream cheese icing, walnuts and a piped carrot.

White cupcakes filled with pastel pnk butterceme, topped with Buttercreme icing and pastel sprinkles.

White cupcakes filled and topped with whipped cream cheese icing, rolled in pastel icing and decorated with cadbury eggs.

In December of last year, my friend at Kristen Duke Photography helped me with a project that we were able to sell to donate to our favorite charity. I baked 11 and froze one of these desserts and she photographed, edited and collaborated this project to sell for Christmas gifts. I was very pleased with the turnout that I purchased a copy for all of my family.

Top tier: Two layer strawberry cake with fudge filling.

Middle tier: Three layer chocolate, strawberry, chocolate cake with fresh whipped cream filling.

Bottom tier: Three layer strawberry, chocolate, strawberry cake with fresh whipped cream filling.

The cake was iced with a whipped cream/buttercreme icing and decorated with chocolate swirls.

The bride and groom requested the cake have chocolate dipped strawberries on top. It was adorable to see their personality in the cake, Lyon and Lara are both red-heads.

January Wedding

The entire cake was iced with buttercreme icing, a bead border and swirled designs.
I embellished the cake with white chiffon, snowflake hair pins and a silver "s" cake topper.

A half sheet double layered cake for a friend's 50th birthday. It was my first cake order out of culinary school. The cake was filled with fresh chocolate whipped cream and topped with coconut pecan icing. The ganache was made with semisweet chocolate and fresh whipping cream.

My first wedding cake

This wedding cake (pictured above) was an assignment to complete an Advanced Pastry course. At the end of the semester at BYU-Idaho, all students created a wedding cake to be displayed at the Floral and Bridal show. The cake itself, is inedible but was iced with buttercreme and marshmallow fondant. It has a unique southern twist with the ruffled skirt around the cake and a femine splash of pink.

The same week, I was asked to use this cake as a display at a wedding reception.
